Dairy Free Chicken Burritos

When life is hectic, crock pots come in very handy.  I cooked a whole 4.5 pound free range organic chicken in my crock pot yesterday.  We ate off of it for dinner, but still had quite a bit left over.  Tonight is going to be another busy evening, so I decided to make dinner early. 

What’s on the menu?  Dairy free chicken burritos!!

2 TBSP olive oil
half an onion, chopped
2 to 2 1/2 cups cooked shredded chicken
1 – 7 oz. can fire roasted diced green chilies
1 can organic black beans, rinsed
1 1/2 cups cooked brown rice
2 TSBP sheep’s milk feta (optional)
chili powder to taste (I used at least a TBSP if not more)
1 tsp dried thyme
sea salt to taste

Saute onion in olive oil over medium heat.  When the onions are soft, add the remaining ingredients.  Season to taste and keep on stove until hot. 

Spoon in to your favorite gluten free tortillas.  Garnish with cilantro, avocado, olives, etc… 

Need a tortilla recipe?  This is my favorite, and it’s gluten/corn/potato free!

Just a thought… I wonder how these would freeze for lunches/dinners if prepared and wrapped ahead of time?  If you try it, please let me know!
